Leftover Rice Pudding

I used this recipe to get rid of a huge amount of leftover rice I had.

You can use any kind of rice you want, however I used a blend of white and long grain wild rice cooked in coconut milk.

Ingredients:

  • 3/4 cup uncooked white rice
  • 2 cups milk, divided
  • 1/3 cup white sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2/3 cup raisins (regular or golden)
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon of rum flavoring

 

1. cook your rice if you havn't already done so, according to the directions on the package. I substituted coconut milk for some of the water to make the rice a little sweeter.

2. In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter, vanilla, and rum. Serve warm.
* really important: make sure to stir your rice immediately when you add the egg.
