Not than I am Betty Crocker by any means... but I do make a nice home made peach cobbler that my boyfriend absolutely loves and would eat it everyday if I made it that often. Howeve, I have celics... and there for can only eat wheat when I can afford a really horrible stomach ache. :(
*TIP: most recipes tell you ( if you use canned peaches) to include the liquid when putting in peaches.. this does not turn out anything but a soggy cobbler... no good. I strain the slices first before added them on top of the batter. The milk provides enough moisture.
Ingredients:
1 stick butter ( 1/2 cup)
1 cup of flour
1 cup of sugar ( I mix light brown and white)
2tsp. baking powder
1 cup milk ( i use about 3/4 cup whole milk and 1/4 cup heavy whipping cream)
vanilla extract ( to taste - I use about a tsp)
1/2 tsp. cinnamon ( to taste)
1 large can or peaches or several fresh peaches
Step2: Melt butter and into a 2-quart baking dish (11x7 or 8-inch square) or a Silicone round like I have here
Step3: In a mixing bowl, combine sugar, flour, baking powder, and cinnamon stir to blend.
Step4: Stir in the milk and vanilla until blended. Pour the batter over the melted butter.
Step5: Arrange the peach slices over the batter. I like to do mine in a circular pattern... im OCD like that
Step6: Bake for 25 to 30 minutes, or until the batter has risen to the top and turned golden-brown and the edges start to pull away from the pan.
Step7: and VIOLA!! Serve warm with a little heavy cream, whipped topping, or a scoop of vanilla ice cream.
